After years of cooking classes and working with clients with all kinds of eating habits, my earlier two books reflected my then current world. The Healthy Hedonist: More than 200 Delectable Recipes for Relaxed Daily Feasts is ‘flexitarian’ and includes some dairy, eggs, fish and poultry. The emphasis again was while these recipes are healthy, never forget the pleasure, or “hedonist” factor which includes feeling energetic and satisfied after the meal as well as delighted during it.

{In her flexitarian cookbook, Kornfeld covers all courses and includes a wide variety of interesting and international dishes. As might be expected, she stresses the use of natural, organic ingredients to maximize the healthful qualities of her recipes. Though most of the ingredients she calls for should be available in specialty, ethnic, and health food stores, she thoughtfully includes a select list of sources. Many of the dishes featured can be prepared quickly - a boon to home cooks.

{Kornfeld's recipes are immensely appealing and fairly straightforward - she includes many that are Mediterranean, Mexican, Indian, or Asian inspired - and healthy without adhering to any particular dietary doctrine (low-fat, low-carb, etc.)
